On the view tab find the plan views button and click it. It should drop down with additional options, choose plan view. If you want to create a new view for a level that already has a view assigned to it you will have to uncheck the box at the bottom of the dialog that comes up. Then when the new view is created go to your view properties and set your discipline and sub-discipline appropriately for plumbing.
The funny part to me is that Plumbing isnt a "Discipline" according to RME. (I guess thats why its not called RMEP?) We dont use the default Discipline Browser sorting, but instead use one that we made, using our own parameters, which allows Plumbing to not have to be a subdivision of Mechanical, because thats just ridiculous. Talk about confusing!
I thought is was strange that plumbing was part of mechanical too, but the way it was explained to me was that there is so much piping that feeds mechanical equipment, med gases, etc, that it was decided to lump it all under mechanical. In the Pacific NW we usually hear it referred to as "wet side" mechanical and "dry side" mechanical, and any "X,Y & Z Mechanical" company does piping, including DWV. There are also companies that just do plumbing, or just HVAC, so you're right about the potential for confusion
