Free Form Shape with Solid Mass

I'm starting a projects that has organic shapes, made from Insitu Concrete
I can make the External & internal Surfaces from a Mass with Roof by Face, but I cannot make the shape have a solid inside?

Not the shape I'm after - But think of a flying Saucer. I can do a Roof By Face for the Top & Bottom Surfaces, But I need to show the inside of the Saucer filled too

Any tips on how to go about this?
