I have notice that some families seem to have more identity data than others is there a way to edit this data in the family editor this space only shows as blank in all families

Some parameters only "come alive" in response to their category - and there's no way to get category-specific parameters across to another, which is why many end up abandoning (the often inconsistent) OOTB parameters for SPs of their own... -
The Identity Data grouping is often collapsed by default.
I can't see it in your screen shot, but way over on the right end of the blue/gray bar there's an "Expand" icon
Clicking on that icon should expose all the Parameters under that groupDave Plumb
