Is there some clever way to have the number of sheets counted and displayed (i.e. Sheet 6 of 25)? Maybe some sort of formula for a parameter in the title sheet?
You sure can, you will need to add "fields" in your title block.

Hope to learn something new here, but to the best of my knowledge, Revit do NOT know how many sheets there´s in a given project (Guess it "knows" but the data is not available), and neither does it "know" whether a sheet is number X or Y in a set... But please correct me if I´m wrong :beer:
Phillip with Kiwi Codes put together a sheet x of x routine a year or so ago called Sheet Counter. When you get to his site watch the video. Go to his Downloads page if you want it but brace yourself...he wants $5 (USD) for it! Although Aussie dollars might be better deal now?

Pardon my terminology, flashbacks from the days of ADT ;p Here is a link to a video describing the technique, he explains it much better than I could. It's not really a paramteric solution as you still have to manually input the total sheet count one time in the project info section. It involves creating a shared parameter and using it in a project parameter:
