I'm not quite sure what you are wanting to do. I wouldn't add a level for the plenum. I'd just model the plenum on an existing level.

Oh, and by the way, you've got an extra M in your spelling.

Plenum levels are used to fill-in Space objects in the ceilings (most-often) and other unoccupied space. These are used IF Heating and Cooling Analysis will be done in Revit MEP. However, according to some designers, Revit analysis lacks in some departments, which is why they still use 3rd party softwares for analysis. After all, Revit is a modelling software.

Going back to the question, just simply type "Plenum" under Sub-discipline Parameter in the View Properties for the View you want to categorize. I am assuming you are using a default template, and a default Browser Organization for MEP.

    Here's the thing..
If you have views that are using a particular Sub-discipline, it will still appear in the Project Browser. Meaning, if all views, let's say, under HVAC, are deleted or replaced, HVAC will no longer appear in your Browser.
So, regarding your question, this is where Duplicate Views come into play. Duplicate your Views for each sub-discipline, then enter your sub-discipline on the DUPLICATES' View Properties. Once you have typed-in your Sub-disciplines, succeeding views can be changed by selecting from a drop-down selection of all USED sub-disciplines.
