How would I go about creating a room schedule which indicates finishes on each individual wall in the room as well as indication the partition type of each wall in a room? Should I create a multiple category schedule?

What you need would require additional project parameters that apply to rooms, such as "Wall finish_North", Wall finish_South", or "Partition_type". The information in these fields will not be really linked to the walls, though.
Another common alternative is the use of a key schedule, such as "Finish Type": A, B, C, etc... where each letter represents a different combination of Base Finish, Ceiling Finish, Floor Finish, and Wall Finish.Freelance BIM Provider at Autodesk Services Marketplace | Linkedin
